Recommended statistics courses around campus (suggested by a marine ecology grad student; last updated June 2011):
UBC Stats Classes:
Val Lemay (Forestry) – She teaches Advanced Biometry, Multivariate Statistics, and a few other classes. I thought she was an amazing prof, very clear, good teacher, and has time to answer questions outside of class. She uses the stats program SAS.
Forestry 531: Multivariate Statistical Methods – Multivariate analysis of variance, cluster, principal components, factor, canonical and discriminant analysis. Theory and conceptual background are presented but emphasis is on selection of appropriate analysis and interpretation of results. Examples from forestry and related fields are analyzed by computer programs at UBC.
Forestry 530: Multiple Regression Methods – Matrix algebra; algebra and inference of multiple linear and multiple curvilinear regressions for solution of problems in forestry and related fields. Non-linear regression. Methods of least squares for analysis of variance and covariance.

Dolph Schleuter (Zoology) – He teaches a spring seminar on Biometry and the stats program R. I recommend sitting in on it even if you don’t officially take it. There are two classes a week, on that introduces a new stats method and the other is a lesson in how to run those stats in R. Dolph is also great at explaining stats in general.
BIOL 548B Advanced Topics in Biology – Quantitative Methods in Ecology and Evolution

Steve Martell (Fisheries) –  They use R in this class and we learned the basics of modeling fisheries yields.
FISH 504/5 Quantitive Analysis of Fisheries I and II

Villy Christiansen
(Fisheries) – Ecosystem modeling class using Ecopath with Ecosym. If you wanted to use Ecopath specifically in your research I would highly recomend taking it. The whole class focuses on ecosystem modeling using this program.
FISH 501 Issues in Fisheries – Ecosystem Modelling
